Indoor Seed Starting
January is a prime time for indoor seed starting, especially for some cooler crops. In zone 7 it is a bit too cold to start direct sowing anything outside so we look to indoor seed starting. It is a great practice that involves germinating seeds indoors before transplanting the seedlings into an outdoor garden.
Inside, set up a dedicated space with adequate light, warmth, and ventilation. You can utilize Grow lights or sunny windowsills to provide sufficient light during the initial stages of growth. Use seed trays or individual pots filled with a well-balanced seed-starting mix. Keep a watchful eye on moisture levels and provide gentle warmth to encourage germination.

What to plant in January
Let’s dive into which plants I recommend starting in January.
Cold Hardy Vegetables
These are cool season veggies that take a bit more time to grow and/or can withstand a lower cool temp. We get a jump on harvest by starting inside before transplanting.
Arugula
Broccoli
Brussel Sprouts
Cabbage
Celery
Leeks
Onion
Spinach
Herbs
These are the herbs I like to start indoors in January so I can control the environment for increased germination. They tend to have a slower growing rate so starting this early allows them enough time to develop to increase survival rate when transplanting.
Lavender
Rosemary
Sage
Thyme
Summer Vegetables
Peppers are the one summer crop I make sure to start in January. They tend to grow at a slow rate, starting early ensures an extended harvesting season.
